250g đmushroom meat (in store)
1 onion chopped
2 tsp red curry paste (adjust as desired)
3 đ„carrots
6 đ„potatoes in quarters
1 x đ„„coconut cream (in store)
1 đlemon squeezed
1/4 cup đ„peanut butter smooth
2 tbsp vegan oyster sauce
2 tbsp brown sugar

Method:
Step 1: Partly cook potatoes and carrots in steamer or boil in pot.
Step 2: Brown onions and then add curry paste to pan .
Step 3: When heated through add coconut cream, peanut butter, oyster sauce, brown sugar, lemon juice.
Step 4: Continue to stir and add potatos and carrots.
Step 5: We chopped our mushroom meat into smaller pieces and added to pan. Warm through and add salt and pepper.
**Serve with Basmati Rice (in store) or Cauliflower Rice - Top with chopped red chilli and fresh coriander.
